Salmon collars are the portion of fish that is left after the front fin is cut off before filleting the fish. They are high in fat content making them quite delectable, they are sort of like the chicken wings of the sea! We like to grill them or season them with sea salt and saute in olive oil. Collars come in approximately 1lb packages.
