A Note On Product Sizes: Wild-caught seafood comes in a variety of shapes and sizes depending on species and where and when it is caught. For this reason, portion sizes vary to some degree. The portion sizes in our descriptions represent average weights. Items offered in .5lb portions may actually be between .4 and .62lb. Items offered in 1lb portions may actually be between .8 and 1.2lb. Not all products on this list will be in stock at all times. King Salmon: The largest, rarest, and fattiest of all the salmon species. This is the most expensive salmon because there are relatively fewer on the market (due to a short fishing season). It is commonly referred to as the “fillet mignon of the sea” and it is the most highly sought-after salmon species due to its high fat content. King Salmon are usually available in .5lb to 1lb portions.

Ivory King Salmon: This is a white-fleshed King Salmon that is the same as a regular King Salmon in every respect except for the color of its flesh. Ivory King Salmon have a rare recessive gene that prevents them from processing color into the flesh, giving them an ivory color. Some are actually marbled with a mix of white and orange, these are truly rare!

Sockeye Salmon: Sockeye are medium in size and among the most prolific of the salmon species. More than 70million Sockeye were harvested in Alaska during the 2022 summer fishing season. They are also among the most desirable because of their iconic red color, high fat content, and buttery flavor. Sockeye make excellent sushi and are generally considered the best salmon for smoking. We sell Sockeye in full fillets (i.e. a full side of fish) and that generally range from about 1LB to a little over 2LB.

Coho Salmon: Coho are a large salmon species – though not as large as King Salmon. They are oily and robust, but somewhat milder than King or Sockeye. This versatile fish has enough flavor to please most salmon lovers but is mild enough to also be enjoyed by folks who are not looking for the full robust flavor of a Sockeye or King. We call Coho the Goldilocks salmon because it’s not too rich and not too lean, it’s just right! Coho portions are available in .4lb to 1.2lb portions. Sometimes we carry a limited supply of Coho in steak cuts or in whole fillets. (During the summer fishing season we also offer whole, fresh-never-frozen Coho Salmon shipped straight off the boats!)

Keta Salmon: Keta are large salmon, about the size of Coho on average, but due to their low oil content they are the mildest tasting of the Alaskan salmon species. There are still plenty of Omega3 oils people are looking for in wild salmon, just in a lower concentration than the other species which makes this mild-flavored fish perfect for people who want to eat healthy but do not care for full-flavored salmon. We sell Keta in .75lb to 1.2lb portions.

Pink Salmon: Pinks are the smallest and most numerous of the salmon species. Like Keta, these salmon trend toward the mild side. They are also softer textured, similar to trout. Pinks are a budget-friendly salmon which we offer in full fillets (a full side of fish) as well as whole H&G (headed and gutted). Fillets average 1lb but may be as small as .7lb and as large as 2lb. H&G Pinks are generally 2.5lb - 3.5lb.

Salmon Collars: The collar is a largely unknown and underrated cut of fish. This is essentially the neck portion of the salmon, along with the pectoral fins. Salmon collars are rich in Omega3 oils. Due to their bone structure they are more a finger food than a fork and knife food. Because of this, we call them the chicken wings of the sea. They are incredible on the grill and even more amazing on the smoker! We usually order a limited quantity of Coho Salmon Collars each season and they don’t last long!

Salmon Bellies: Salmon bellies are thin strips that are usually trimmed off during the filleting process. The bellies usually include the pelvic fin and, like the collars, they are among the fattiest and most flavorful part of the salmon. Smoked salmon bellies are a real treat. We occasionally offer King Salmon Bellies in 1lb bags. Smoke, grill, or sauté them for best results!

Salmon Heads: Salmon heads make excellent stocks and soups! We offer King Salmon heads with collars attached flash frozen and individually vacuum sealed at the source. There are many different recipes to be found for fish heads encompassing food cultures spanning from Asia to Scandinavia.

Halibut: Halibut are slightly sweet in flavor and have a firm, meaty texture. This hearty fish maintains it shape well and is suited to any number of cooking methods including baking, sautéing, deep frying, and grilling. We currently offer these in .5lb and 1lb skin-off portions.

Halibut Trim: This is the same meat as our fillet portions, with the same flavor and texture. The difference is, instead of one solid fillet portions these are trimmings from the fillet process that we bag up into 1LB bags. Each bag usually contains 6-8 smaller portions that are perfect for fish tacos, battered fish n’ chips, or chowder.

Halibut Cheeks: The cheek is the best part of a halibut, although most folks outside of the Pacific Northwest are unaware of them. They are more tender and delicate, with a sweeter flavor than the fillet meat of the halibut. Most people cook them like scallops by browning them in the skillet with butter, salt, pepper, and garlic. Halibut cheeks are a true delicacy you won’t often find outside of Alaska. We sell these in 1lb bags. The number of cheeks in each bag depends on the size of the fish they were cut from but is usually around 5-7.

Black Cod (Sablefish): Although Alaskans refer to this fish as a cod, it is not a true cod; rather it is a Sablefish. These delicious fish are caught in deep water between 800 – 8,000 feet (usually trending toward the deeper end of the spectrum). They are delicate and flaky – oily, yet mild in flavor. Because this fish is so delicate, we always keep the skin on for cooking. They are excellent grilled, smoked, or lightly sautéed in butter.

Yelloweye Rockfish: This deep water white fish is tender, flaky, and mild in flavor. It makes excellent fish tacos or fish n’ chips. Portions are boneless and skinless and range between .8lb to 1.2lb.

Black Rockfish: Black rockfish are flaky and mild white fish, very similar to Yelloweye. The main difference is in size. Black Rockfish are smaller than Yelloweye and tend to be thinner fillets. We currently do not carry Black Rockfish.

Lingcod: Lingcod are ferocious-looking fish with tender, flaky, oily white flesh. They are somewhat sweeter and more complex in flavor than Yelloweye, but they also make excellent fish tacos or fish n’ chips.

Pacific Cod: Also known as True Cod, Pacific Cod is one of the most prolific white fish species found in Alaska. They have a soft texture and mild flavor. Our boneless, skinless Pacific Cod fillets average about 1LB. The most common use for Pacific Cod is battered fish n’ chips. It is also commonly used in soups and chowders!

Bairdi Crab: Bairdi is the largest species of Snow Crab. This large crab is slightly smaller than the better-known King Crab, but many Alaskan crabbers consider Bairdi to be superior in flavor and texture. We offer these seasonally in 6.6lb cases of cooked leg clusters, usually in March. Pre-order only, subject to availability by our suppliers in Alaska.

Kelp Salsa: This delicious salsa is made with Bull Kelp that is harvested from the same waters, and often in the same area, as our salmon. This salsa is produced by Barnacle Foods in Alaska’s capital city, Juneau, by a husband and wife team. We offer this salsa in three flavors, Original (mild, tomato/garlic). Campfire (spicy, chipotle/southwest), and Bonfire (hot, smokey, then sweet, and ends with a spicy punch, that will leave your mouth hot.)

Bullwhip Kelp Hot Sauce: Crafted by the same people who make our Kelp Salsa, this hot sauce is thick with an almost creamy texture and a delightful heat from piri piri peppers. Texans are hot sauce experts with many great options to choose from, but the folks who pick up a bottle from us at a farmers market always come back for more!

Raven’s Brew Coffee: Raven’s Brew is based in Ketchikan, Alaska, which is the first port of call for most cruise ships touring Alaska’s inside passage. These coffees are rich, complex, and clean-flavored. They have a smooth, strong taste with little to no acid. Raven’s Brew packaging is designed by the world-famous Alaskan artist, Ray Troll who lives in Ketchikan. We carry a variety of Raven’s Brew blends in whole bean and ground 12oz bags.

Alaska Pure Sea Salt: This hand-crafted flake sea salt is produced by a husband and wife team in the old Russian capital, Sitka. Derived from the pure seawater of coastal Alaska, these salts are a true artisan product. We offer the Wild Alaskan Blueberry and Aldar Smoked varieties.

Wild Salmon Caviar: Our wild salmon caviar is produced in Juneau and comes in 1.75oz glass jars. Our caviar is shelf stable and does not require refrigeration until after it has been opened.
