Although Alaskans refer to this fish as a cod, it is not a true cod; rather it is a Sablefish. These delicious fish are caught in deep water between 800 – 8,000 feet (usually trending toward the deeper end of the spectrum). They are delicate and flaky – oily, yet mild in flavor. Because this fish is so delicate, always keep the skin on for cooking. They are excellent grilled, smoked, or lightly sautéed in butter. At this time the majority of our Black Cod fillets are approximately 1.25lb. Orders will be fulfilled with portions ranging between 1.2lb and 1.3lb
